Knowing stainless steel grades will help you choose materials that are suitable for strength, corrosion resistance, hygiene, fabrication and budget.
Stainless steel is used in kitchens, manufacturing, construction and industrial equipment, but each grade performs differently because its alloy composition and microstructure vary.
The 200, 300, and 400 series are the major classifications based on differences in chromium, nickel, manganese, carbon, and other alloying elements.
These differences affect corrosion resistance, hardness, cost and suitable applications according to the stainless steel grade classifications. Here are the details:
Manganese and nitrogen are used in the 200 series to replace part of the nickel. Grades 201 and 202 are inexpensive choices with good formability and standard corrosion resistance.
These stainless steel grades are commonly used for household products, decorative parts, automotive trim, and similar.
The 300 series is very popular with 304 and 316. Nickel and chromium content will generally have high corrosion resistance and toughness.
Grade 304 is common for cookware and food equipment, while Grade 316 contains molybdenum for better performance in salty, acidic, or chloride-rich environments.
The 400 series contains little or no nickel and includes ferritic and martensitic materials.
Grade 430 is economical for moderate conditions, while 410, 420, and 440 have more hardness and wear resistance for cutlery, tools, and fasteners.

Besides numerical series, stainless steel grades can also be understood through metallurgical families. In stainless steel families, the structure affects magnetism, hardening behavior, corrosion resistance, ductility, and weldability. The main categories are:
Austenitic stainless steel is one of the most common families. It generally has excellent corrosion resistance, formability, toughness, and welding performance. Grades 304 and 316 are examples.
Ferritic stainless steel contains more chromium and less nickel than austenitic types of steel. It is magnetic and cost-effective and suitable for kitchenware, appliances, exhaust components, and decorative items.
Martensitic stainless steel has more carbon and can be hardened by heat treatment. It is hard and wear-resistant and can be used for knives, scissors, surgical tools, and mechanical components.
Duplex combines austenitic and ferritic structures and gives it a very high strength and very strong resistance to certain kinds of corrosion. It is suitable for demanding marine, chemical, oil, and gas applications.
PH stainless steel is made for high strength and corrosion resistance applications. When heat treatment is applied properly, the mechanical properties are suitable for precision and high-performance industrial parts.

The choice between these stainless steel grades is based on operating conditions, fabrication requirements, expected service life and budget.
Here’s our comparison of the 200, 300, and 400 series to highlight the differences in corrosion resistance, nickel content, strength, and cost:
|
Series |
Main Advantages |
Main Disadvantages |
Typical Uses |
|
200 |
Economical, formable, useful strength |
Lower corrosion resistance than 300 series |
Household goods, decorative parts, automotive trim |
|
300 |
Excellent corrosion resistance, weldability, versatility |
Higher nickel content can increase cost |
Cookware, food equipment, tanks, marine applications |
|
400 |
Cost-efficient, magnetic, good hardness |
Generally lower corrosion resistance and weldability |
Cutlery, tools, appliances, fasteners |
It is not a must to have the best grade. It should meet actual operating and performance needs without unnecessary cost.
Yes. Grade 304 is widely used for cookware, sinks, worktables, containers, food-processing equipment because it has good general corrosion resistance and formability.
Grade 316 is preferred when equipment is regularly exposed to salt, chlorides, acidic substances, marine conditions, or demanding chemical environments.
No. Different series are for different reasons. Some 400-series materials have good hardness, wear resistance and affordability so they are good for knives and tools as well as kitchen components.
Tell suppliers about intended use, contact materials, cleaning conditions, temperature, dimensions, finish and expected service life. These are the details that help determine which stainless steel grades have the right balance of performance and cost.
