Food grade standard stainless steel is the right choice for food contact when grade, finish, construction and use are considered. Chromium in the alloy forms a passive layer that helps protect the metal from corrosion. Its smooth surface can be thoroughly cleaned and used for all kinds of purposes, from cooking, storage and serving.
But “food grade” does not mean one grade only. Stainless steel 304 and 316 are common in food-contact equipment and 430 may suit less demanding tasks. Salt, acidity, heat, moisture and cleaning chemicals are the factors that determine which is best.
Its performance is a function of many related properties. Together, they help kitchenware cope with repeated washing, temperature changing, different ingredients and busy kitchen procedures. Here are some of its characteristics:
Chromium provides a protective oxide layer that helps to prevent rust from water and steam. And very salty or acidic conditions can still damage unsuitable grades, so good selection and care is crucial.
A suitable grade will have a stable, low-reactivity surface that would be stable without it. When properly prepared it is less likely to alter the taste or release unwanted substances. Buyers should be able to judge quality by grade information and safety standards and not on appearance alone.
The smooth, non-porous surface does not readily absorb odors, liquids or residue. Mild detergent is usually used for cleaning in the home; commercial equipment can also help with tougher sanitation. The smooth finish also minimizes areas of residue.
Stainless steel can tolerate cooking, steaming and baking temperatures. Well-made kitchenware retains its shape during repeated heating and cooling but handles, coatings, joints and layers of bases may have their own limits.

Grade 304, which is about 18/8 stainless steel, has about 18% chromium and 8% nickel. It provides robust corrosion resistance for everyday use and is commonly used for pots, pans, bowls, sinks, utensils, counters, and storage equipment
Grade 316 contains molybdenum to increase resistance to chlorides and aggressive environments and is used for seafood processing, salty ingredients, acidic products, marine settings, and high-specification commercial equipment. This resistance is usually at a higher cost.
Grade 430 is magnetic ferritic stainless steel with chromium and little or no nickel. It is cheaper but less corrosion resistant than 304 and 316. Common applications include cutlery, appliance panels, housings and splashbacks. The general resistance ranking is 316, followed by 304, and 430.
Compared with others, this material is safe for handling, easier to clean, intensive use and looks good.
